Tomato Pie YUM, YUM!

So I found a delicious recipe I want to share.  I found it off www.pinterest.com  and it came from www.myheartsdesireblog.com  If you love tomatoes you will love this recipe!!  It will be great with the tomatoes from your garden. 





Enjoy!!  I am making another today because we enjoyed the first one so much.


1 unbaked pie crust (I prefer refrigerated Pillsbury)

8 oz shredded mozzarella cheese

1/4 cup chopped onion

2 T. chopped, fresh basil

2-3 fresh tomatoes, peeled and cut into thin slices

1/2 t. salt

1/4 t. pepper

1/8 cup olive oil

1/3 cup fresh, grated Parmesan cheese



Preheat oven to 400 degrees.



Using a very sharp knife, peel and slice tomatoes. Lay the tomatoes on top of two layers of paper towels. Sprinkle tomatoes with a dash of salt and place one more layer of paper towels on top of tomatoes. Leave tomatoes to drain while you prep the other ingredients. This will prevent your pie from becoming too watery.  Layer the pie according to the ingredients!!

Chicken Bacon Quesadilla

I made these and they are delicious.  I am starting a new diet!! Ha Ha so I could only have one.  I used bacon bits instead of bacon and I used wheat tortilla.  It was delcious!!

Today I Will Make a Difference 
This is an email I received from Up Words with Max Lucado.  It really touched my heart.  I also noticed it was the same email sent out today by Bob Proctor
Today I Will Make A Difference

Today I will make a difference. I will begin by controlling my thoughts. A person is the product of his thoughts. I want to be happy and hopeful. Therefore, I will have thoughts that are happy and hopeful. I refuse to be victimized by my circumstances. I will not let petty inconveniences such as stoplights, long lines, and traffic jams be my masters. I will avoid negativism and gossip. Optimism will be my companion, and victory will be my hallmark. Today I will make a difference.
I will be grateful for the twenty-four hours that are before me. Time is a precious commodity. I refuse to allow what little time I have to be contaminated by self-pity, anxiety, or boredom. I will face this day with the joy of a child and the courage of a giant. I will drink each minute as though it is my last. When tomorrow comes, today will be gone forever. While it is here, I will use it for loving and giving. Today I will make a difference.
I will not let past failures haunt me. Even though my life is scarred with mistakes, I refuse to rummage through my trash heap of failures. I will admit them. I will correct them. I will press on. Victoriously. No failure is fatal. It's OK to stumble...I will get up. It's OK to fail...I will rise again. Today I will make a difference.
I will spend time with those I love. My spouse, my children, my family. A man can own the world but be poor for the lack of love. A man can own nothing and yet be wealthy in relationships. Today I will spend at least five minutes with the significant people in my world. Five quality minutes of talking or hugging or thanking or listening. Five undiluted minutes with my mate, children, and friends.
Today I will make a difference

Another Angel in Heavan

Well another school year is coning to an end.  I had to give a summary of my year.  I have so enjoyed this group of children I have had.  I am not always able to say that.  They have stirved in all areas and have made me very proud.  There is some sadness to this school year ending.  A former student who was in third grade died in a car accident over Memorial Day weekend.    I love my students.  I have them for 180 days and just because they leave they are still mine.  I always tell them that.  "Remember, I had you first"  We had prayer on the third grade hallway before the students got there.  The presence of God could sure be felt.  Even though we may not understand; God needed him  John 14:18  Jesus says he will come to us to comfort us.  That is my prayer for the family today. 

As this year comes to an end.  It also brings an end to my son's highschool years.  Yes, he is graduating and I couldn't be more proud of him.  As one of my friends said "Phase one done!! Now to get them through college!!!"
